Nosh on Naples Bay introduces executive sous chef, management team

Nosh on Naples Bay has named Richard Howze as executive sous chef, Matt Johnson as managing partner and Roger Marais as general manager.

Recently opened at Naples Bay Resort, Nosh on Naples Bay is an upscale, modern dining experience located at 1490 Fifth Ave. S., Suite 101, in Naples. Featuring a prime waterfront location with boat access and an open-kitchen concept, Nosh on Naples Bay seats 120 indoors, and will soon also seat 40 outdoors, all with spectacular views of the bay. Reservations are available for private event space for up to 32 guests.

“Richard, Matt and Roger represent some of the best culinary and restaurant management talent in Southwest Florida, and we are lucky to have these three key leaders on our team,” said Chef Todd Johnson. “Executive Sous Chef Richard Howze brings decades of experience having worked in many well-known establishments with some the area’s top chefs, and Johnson and Marais bring a passion for people and years of front-of-house management skills to the team. Howze began working at Fort Belvoir for the Department of Defense. He comes to Nosh with over 35 years of experience in the restaurant business. He began working in kitchens at the age of 15. Locally, he has worked at Naples Grande Beach Resort, Edgewater Beach Hotel, Rumrunners, Rosy Tomorrows Heritage Farm, with Chef Brian Roland of Crave Culinaire, and as a chef on private yachts.

Johnson was raised in Naples and was introduced to the restaurant business at 16 years old. He began washing dishes after school every day and quickly climbed the ranks working as bus boy, pizza maker, pantry cook, bartender, server and dining manager. His strong front-of-house skills have led him to management jobs on 5th Avenue South in Naples including Ocean Prime and Tommy Bahama. His adventure into craft cocktails and global wines has given him the knowledge to build a unique cocktail list and delicious and diverse wine list for Nosh.

Marais has over 20 years in the restaurant business, working at several fine-dining establishments along the way. He moved to Naples in 2003 and enjoyed what Naples had to offer but took a seven-year relocation in Michigan in 2014. He worked for Darden Restaurants for 15 years, including The Capital Grille. He also worked at Ocean Prime on 5th Avenue South.
